Almond and coconut flours have been around the paleo community FOR YEARS. (This is my favorite coconut and this is my fav almond flour)

But let’s be honest.  While almond and coconut flours have their place, they aren’t the best substitute for regular flour.

Almond flour is NOT my friend, as many of you know (I stay away from nuts for the most part).

And coconut flour has this remarkable ability to totally dry out my mouth in one bite.

Plus you have to use like 12 eggs in every recipe!

But recently I discovered a new flour that makes an AMAZING substitute for white flour.

Like 1:1 ratio amazing.

Tigernut Flour

Tigernut flour is the newest flour in the paleo world and it’s exciting for great reasons.

It’s not a nut, but actually a small root vegetable.

That means it’s autoimmune and allergy friendly, which is great for those of you who follow a restricted diet.

And the taste is second to none.

When I bake with tigernut flour, I can hardly taste it.

You know how a lot of alternative flours have a kind of aftertaste?

You’re eating your paleo treat and all of a sudden you’re AWARE that you’re eating a paleo treat.

Yeah, tigernut flour doesn’t do that.

The recipes turn out tasting LIKE THEY’RE SUPPOSED TO!

That’s something that hasn’t happened for me since I gave up gluten long ago.

From an ancestral perspective, there’s some cool research (done here at Oxford!!) that our ancestors ate lots of tigernuts, maybe even up to 80% of their diet, so it really fits in with the lifestyle.

Plus they contain not only carbohydrates but protein and a good bit of fat along with zinc, magnesium and a whole list of other vitamins that make a really balanced baked good or snack. 

Some people have said that tigernut flour has a slightly “gritty” texture.  I didn’t notice that myself but I’ve always used it in cookies.

I think it makes an awesome flour for anything slightly denser, like cookies or brownies.

My absolute favorite cookie to make with tigernut flour is an “oatmeal” raisin.  It’s the PERFECT texture. YUM!

With baking, you can actually replace white flour at a 1:1 ratio with tigernut flour.  

That means you can use your old favorite recipes again!

The only annoying thing about tigernut flour is that it’s hard to find in stores.  To use it, you will most likely have to order it online.
